I just found this com and see that it hasn't been updated in ages.
I'm bored with my latest food fare and was hoping to get some ideas from people. I'm lacto-ovo and work long days so am looking for something quick and simple.
And here, this is something I like to make:
Now, this is really easy, and not anything new or snazzy, but thought I would share.
I use flour tortillas, veggie refried beans (or any type of beans you want), small can of sliced olives, frozen corn, onions, mix of mozzarella and cheddar, a can of enchilada sauce.
See, I told you it was easy.
I stir fry the onions (and you can toss anything else you want in there with them like baked potato, asparagus heads, fake meat) and add the corn. Then I just fill the tortillas with all the goo, cover with the sauce and pop it in the oven at around 350 until the cheese is melted.
